Everyone has a gol gappay cart they defend. We tried five in one evening and judged them on one thing: the water.

The best water was sharp with tamarind, cold, and had a real hit of black salt and mint. The worst tasted mostly of packet masala.

What good water tastes like

Our favourite was the smallest cart, run by two brothers who make the water at home every afternoon and bring it in steel pots.

Verdict

9/10 · sample score

The steel-pot cart wins. Ask for the sweet water on the last two.

Good

  • Water made fresh daily
  • Crisp shells
  • Cart is spotless

Not so good

  • Only open after 5 pm
  • Sells out on weekends
